Antioxidant - Mixed Carotenes
Carotenoids [along with Flavonoids]
are responsible for most of the color in fruits and
vegetables.
They are powerful antioxidant compounds, and belong
to one of two families of carotenoids:
- Carotenes - contain only carbon
and hydrogen compounds, and the xanthophylls
- Common carotenes - include the
alpha-and beta-carotenes abundantly found in carrots,
and lycopene [the red coloring of tomatoes].
There are over 600 different carotenoids which studies
indicate may be able to reduce the risk of cancer, and
protect against heart disease.
